Coconut Rice Porridge with Berry Chia Jam
What do you do when you have leftover rice after your dinner? You make this comforting coconut rice pudding the next morning! The cinnamon adds to the coziness of this breakfast, especially in combination with the stewed berries, and the nut butter on top brings a lovely richness.Servings

½ cup (65g)frozen mixed berries

2 cups (315g)cooked white rice†

1⅔ cups (400ml)canned light coconut milk

½ tspground cinnamon

¼ cup (65g)unsweetened coconut yogurt

2 Tbsp (32g)natural peanut butter

¼ cup (35g)unsalted roasted almonds, chopped
Directions
- Place the berries in a bowl and microwave at 600W for about 3 minutes, stopping to stir every minute. Alternatively, stew on the stove.
- Then stir in the chia seeds and set aside for the chia seeds to gel.
- In a saucepan, combine the rice, coconut milk, maple syrup, and cinnamon. Bring to a boil over high heat, then reduce to a gentle simmer and cook uncovered for about 5 minutes, stirring often, until warmed through and creamy.
- Taste and add more maple syrup if desired. Divide between bowls and top with the berry chia jam, yogurt, peanut butter, and chopped almonds. Enjoy!
Notes
- †⅔ cup uncooked white rice makes about 2 cups cooked rice.
Storage
- Best enjoyed the day it's made.
- Leftovers can be stored in an airtight container in the fridge for up to 1 day.
