Great work guys, this was really nice! When I dipped the bread into the batter it went super mushy and I thought maybe it wouldn’t work out… but when I put it on the pan and it started crisping up my fears dissipated! I substituted the coconut milk for oat milk, and didn’t have flax seeds so used oats instead. Also I used half the banana instead of a quarter, which I think worked really well. Simple, and it tasted like pancakes! P.s. would love to see a video of recipes from every country in the world, or perhaps how to pickle veg? From Kalk Bay, South Africa

One of my favourite breakfasts when I was younger was warm French toast with peanut butter slathered on top. Ever since going vegan, I’ve never even thought of having a vegan version of French toast. Tried this today (without flaxseed since I didn’t have any at home) and it was DELICIOUS!!! My pan had curved edges and was non stick and I had no issues with it sticking or falling apart. Wish I could post a picture of how yum it looked and how much more YUM it tasted! Such a simple, quick and delicious breakfast/snack!

This was such a delicious deviation from traditional French toast in an unexpected way! This recipe makes enough batter for 8 rolls instead of 4. One thing to note though— you have to be really mindful of the toast rolls when cooking them on the stove. They easily stick to the pan, so you have to keep an eye on them the whole time.

Almost everything went wrong with this recipe lol. My coconut milk in the can refused to open, so I used almond milk. Swapped flax for chia then cinnamon for nutmeg. As for the bread I used buttermilk bread I think I rolled it out too thin though as it broke apart in the cooking process. I found that it also stuck to the pan a bit which made it harder to flip even though I used the amount of oil needed. I cooked for 5 minutes on each side and they turned out really crispy but still soft inside. After letting it cool I tried it out and it was good but I think it was a bit undercooked? I wasn't sure if it was the banana or I messed it up. Last thing I used 6 slices instead of four and still had a lot of the mixture left over as well.

Hey there, Alex, it sounds like you faced quite a few challenges! I suspect swapping coconut milk for almond milk might have affected the dish, as coconut milk's thicker consistency and higher fat content play a key role in the recipe's texture. For the bread, choosing a sturdier type next time might help prevent it from breaking apart, as softer bread like buttermilk might not hold up as well in the cooking process (of course, not rolling it too thin can also help). Even with the right amount of oil, some pans are more prone to sticking. A non-stick skillet or adding a bit more oil might help. Also, ensuring the pan is fully heated before adding the bread can reduce sticking. If the outside was crispy but the inside undercooked, adjusting the heat to a lower setting and extending the cooking time could help achieve a more even cook. I tried making this but the bread tore when I tried to roll it up. I then didn’t finish the recipe and just ate it as a PB banana toast but I was sad that it didn’t work out. Any Ideas how I can make it work in the future? Maybe the bread was stale or something?

Hey there, Celina, oh no! We're sorry to hear the rolling didn't go as planned. To avoid tearing, ensuring the bread is fresh and soft can help it squish well together. We want to bread flattened nicely but also not too thin so perhaps being a touch more gentle when rolling with the rolling pin can help reach this balance.
If the peanut butter layer is too thick, or if your peanut butter is naturally thicker or cold, this can also make the bread less flexible and more prone to tearing when rolled. Hey Ratna, we've only used full-fat coconut milk for its creaminess and richness but imagine you could use an alternative plant-milk like soy or oat if you'd like. Since we only use plant-based products here at PUL we haven't tested it out with cows milk, but we hope you enjoy the french toast rolls if you give it a try 😊

To be honest, the exterior doesn't get all that crunchy, but to get it just subtly crispy, make sure the oil is adequately hot before adding the rolls, and try not to overcrowd the pan. Also, you can cook the rolls for slightly longer for a more golden texture 🙂
