Ingredients

Vegan french toast batter

  • 1⅔ cups (399 mL)
    canned light coconut milk
  • 1 Tbsp (15 mL)
  • 1 Tbsp (7 g)
    ground flaxseeds
  • 2 tsp (5 g)
    ground cinnamon
  • 1 tsp (2 g)
    ground ginger
  • ¼ tsp
    ground cardamom (optional)
  • ¼ tsp
    ground turmeric
  • ⅛ tsp
    ground nutmeg (optional)
  • ⅛ tsp
    ground cloves (optional)

Assembly

  • 1 Tbsp (15 mL)
    vegetable oil
  • 10
    thick slices of bread

Toppings

  • 1½ cups (360 mL)
    unsweetened coconut yogurt
  • 2 cups (300 g)
    fresh mixed berries
  • 2 Tbsp (30 mL)

Directions

  1. Add all of the batter ingredients to a wide, shallow bowl. Whisk well.
  2. Preheat a large pan on medium-high heat with a bit of oil.
  3. Dip the slices of bread into the mixture, letting it soak for a few seconds before flipping and covering the other side. Let the excess batter drip off, or wipe off if needed.
  4. Place the soaked slices onto the frying pan, and let it cook for 2 - 3 minutes, until golden, before flipping. Repeat on the second side.
  5. Flip again to crisp the outside further, another minute or so on each side. Add more oil as needed between batches.
  6. Remove from the pan and serve with your favourite toppings. Enjoy!

Notes

  • Stale bread is preferred, otherwise the toasts get too soggy, especially in the middle.

Storage

  • Best if enjoyed immediately.
  • Keep leftovers in an airtight container in the fridge for up to 2 days.

The flavors of this french toast is outstanding! i’m not a huge sweets person but my husband loves french toast so I really made it for him but I enjoyed it myself!

Such a fan of these. I'm glad I can finally have french toast again in my breakfast rotation. The smell is very autumnal and warms my heart.

Marguerite De Valois - Oct. 22, 2024, 7:37 a.m.

Super pain perdu. Original par toutes ses épices. À refaire avec grand plaisir. Ne pas mettre ni la cardamome ni la levure nutritionnelle qui rappellent trop le salé d'un plat. Un petit filet de beurre de noix est parfait par dessus

Fourth recipe I've tried on my trial and WOW!!! Super delicious and so easy. I had frozen mixed berries so I put some sugar and lemon in a saucepan and made a compote. SO EASY!!!!!!!!! I wish I could give more stars!!!! Thanks!!!

delicious!

Sorena - June 30, 2024, 5:56 p.m.

Made it this morning at it was an absolute hit!

We used a multi-grain bread with a hard crust and whole seeds and nuts (which gave it some crunch) and added a tsp of vanilla.

So… good!

PUL small logo PUL Team - June 30, 2024, 6:04 p.m.

Mmm love the idea of extra crunch from the bread 🥰 so glad that the vegan french toast was enjoyed, Sorena!

Hi ! Really enjoying your App!!
I wanted to know if you can freeze the Vegan French Toast for later use?
Thanks!

PUL small logo PUL Team - June 3, 2024, 4:16 p.m.

Hi Fran, so glad that you're enjoying the app. We haven't tried freezing this recipe so we can't say with certainty, but we imagine you could. Just be sure to let it cool before freezing, and perhaps warm it up in a toaster or on the stove before enjoying it to help it crisp up 😊

Thank you!!

This was my first French toast ever. It got more wobbly than expected (I tough it would become more crispy?) but was very tasty and interesting to chew altogether 😅
I used thawed bread - maybe it need to be fresh. I'll try it 😊

Roosa Rantanen - Feb. 22, 2024, 9:37 p.m.

They are not meant to be crispy and old bread is the best. The french called this Pain perdu, which translates to "wasted bread" :)

Sahiti Ravulapati - Jan. 22, 2024, 10:33 a.m.

Prepared it for the first time. Have to taste it yet. But it looks yum

Taina - Jan. 14, 2024, 12:08 p.m.

French Toast was my favorite dish as a kid. I haven’t prepared it in a really long time, because I didn’t know a good vegan recipe. I really loved this one! With the yogurt it is creamy, the toast tastes like a warm hug and the berries give the dish a delicious lightness.

Dear Sadia and PUL team,
I pick this random recipe to thank you for the amazing work that you do every single day. Your recipes are incredible and they bring me so much joy every time I scroll through your website or instagram page.
I also wanted to share with you the fact that, a few days ago, I created an arsenal of vegan recipes for my best friend (who's leaving to study abroad for 6 months) to encourage her to - at least - try a few plant-based recipes. And, drum roll please.... 90% of the recipes I chose come from this website! So thank you for helping me.

I admire you for always having new and exciting ideas, sharing with us the most delicious food, taking mouth-watering pictures and showing the world that vegan doesn't mean bland, boring and repetitive.

I appreciate you more than words can say.
Have a wonderful rest of your week!

PUL small logo PUL Team - Jan. 11, 2024, 1:34 a.m.

Oh, Ari, you're incredible! How kind of you to make a bundle for your best friend too 🥰 Your support truly fuels our passion, and we're so grateful to have you in our PUL community. It means the world to us that our recipes bring joy to your kitchen. Here's to make delicious adventures ahead 🤗✨

Pooja - Jan. 6, 2024, 5:44 p.m.

I never like French toast before but as usual a Pick Up Limes recipe changed my taste 😍 The coconut milk and spices make it so yummy. Love the yoghurt topping as opposed to usual whipped cream you get served at a restaurant. It’ll be a staple weekend breakfast in our household.

PUL small logo PUL Team - Jan. 9, 2024, 12:06 a.m.

Aww thank you for the glowing review, Pooja, it means the world! We hope you continue to love the Vegan French Toast 🤩

PUL small logo PUL Team - Jan. 8, 2024, 11:39 p.m.

Woohoo! What a lovely compliment, Cate, thanks a bunch ☺️

Louise Magnusson - Jan. 2, 2024, 7:12 p.m.

Yummy recipe, and it is amazing that this luxurious breakfast is not difficult to make. I used slices of walnut bread that was great: the pieces of walnuts gave a nice extra crunch in addition to the fried crust😋
I used oat beverage in the batter, and I served my toasts with coconut yoghurt and strawberry jam.

This recipe reminds me so much of the Swedish counterpart called ‘fattiga riddare’, normally eaten as a dessert, which I ate during my childhood. Great walk along the memory lane at breakfast😂

PUL small logo PUL Team - Jan. 3, 2024, 11:46 p.m.

Hey there, Louise, aw we're so happy that the french toast was enjoyed and love the connection to fattiga riddare! We'll be sure to give this a try with walnut bread 🤩

Priyanka Rajput - Dec. 19, 2023, 11:59 p.m.

The recipe looks yum. I am going to try it tomorrow. Is it possible to replace the flax seeds though? I don't like their taste.

Thanks

PUL small logo PUL Team - Dec. 21, 2023, 6:20 p.m.

Hey there, Priyanka, you can replace the flax seeds with ground chia seeds. You could also omit them altogether, but the batter may not stick to the toast as nicely. We hope you enjoy the recipe if you give it a try 😊

Priyanka Rajput - Dec. 22, 2023, 1:13 p.m.

I tried replacing the flax seeds with corn flour and the result was fine. I will try with chia seeds next time. Thanks for answering
