This is one of our favourite no-oil and sugar-free granola recipes. It makes a huge batch of granola that can be enjoyed for days and days - on smoothies, plant-based yogurts, or as a snack. It's slightly sweet and slightly savoury, and the flavours can be varied up each time depending on the dried fruit or nuts added in.

Dry ingredients

  • 3 cups (306 g)
  • ½ cup (79 g)
    raw almonds, roughly chopped
  • ½ cup (65 g)
    raw cashews, roughly chopped
  • ½ cup (80 g)
    raisins
  • ¼ cup (40 g)
  • ¼ cup (36 g)
    raw sunflower seeds
  • ¼ cup (39 g)
  • ¼ cup (23 g)
    unsweetened shredded coconut
  • ½ tsp
    ground cinnamon
  • ¼ tsp
    salt (optional)

Wet ingredients

  • 1 cup (178 g)
    Medjool dates, pits removed
  • ½ cup (120 mL)
  • ¼ cup (60 mL)
    water, plus more as needed

Directions

  1. Line a baking tray and preheat the oven to 300°F (150°C)*.
  2. Add all the dry ingredients to a large bowl and mix.
  3. Add the wet ingredients to a small food processor and blend until smooth**.
  4. Add the date mixture to the bowl and mix to combine.
  5. Spread the granola evenly on the baking tray. Bake on the centre rack of the oven for 25 - 30 minutes, stirring once or twice throughout.
  6. When the granola is lightly golden, remove from the oven. When fully cooled, transfer to an airtight container or large glass storage jar. Enjoy!

Notes

  • * We used top and bottom heating (not fan-assisted/convection).
  • ** Tahini consistency can vary between brands—some are thick, while others are thin. If your tahini is on the thicker side, consider adding a small splash more water to reach the desired consistency. However, be cautious not to add too much water, as this can result in overly soft granola when stored.
  • This recipe has been slightly modified from Jenny Mustards’ Super Healthy Granola recipe and is shared with permission.

Storage

  • Store sealed on the counter for up to 2 weeks.

It was good, but a bit weird with the tahini in my opinion. I'll probably try substituting for peanut butter or something else, although I'm sure the tahini is part of what makes it so healthy?

Hey Reid, we get that tahini can feel a bit different in taste 🙂 You could swap it with peanut butter or another option for a flavour you prefer. Most nut and seed butters are rich in nourishing fats and minerals, so it’s worth experimenting with if you like!

Hey Danielle, we're excited for you to try the granola recipe! We haven't tried it ourselves, but we've heard using an air fryer to dehydrate granola can work well. Perhaps you can set it to a lower temperature, such as 200°F (93°C) - I find air fryers tend to be much more efficient than ovens - and check every 5 - 10 minutes, stirring often to ensure it doesn't burn and cooks evenly. Let us know if you give it a try 😊

Being new to this way of cooking and eating I found this to be a little bland with unsweetened Almond milk. I would probably add some maple syrup to the date mix in the food processor stage. I am, however, going to be trying the other granola recipes you have first.

I used peanut butter rather than tahini, and this granola is so delicious! But I recommend using a thinner peanut butter instead of thick, because it’s hard to blend with the dates. My daughter loves it! Highly recommended for such a healthy granola!

We loved this granola so much!! Our blender sucks though, so we had to add more water and top it with some of the date pieces instead of having them all in the tahini mixture. Would it be possible to make these in bar form?

Hi Jane! We imagine the mixture wouldn't be sticky enough to form bars with the original recipe. Adding more of the pureed dates, some syrup, or nut/seed butter could help the mixture get sticky enough to make bars before firmly pressing the mixture into a pan. We can't say with certainty what the proportions would be as we haven't tested it out.

The bigger clusters were chewy and the smaller ones were crunchy. After it had cooled down, I decided to put it back in the oven for a few more minutes at a lower temp (~150*c) to make it more dry. I think some clusters were too big. Next time I'll break it up a bit. Any other suggestions?

This recipe uses dates as the sweetener, which can also contribute to a chewy rather than crunchy texture. If you're interested, we have several other granola recipes that use sugar instead, and sugar (in place of dates) can result in more crunchy granola 😊

Hey Yuzuru - ah gotcha! In general heat can impact some nutrients. For example, some heat-unstable nutrients such as B vitamins and carotenoids might be impacted. Other nutrients, such as phenols, flavonoids, and antioxidant properties may improve after baking. Seeds are still incredibly wholesome whether or not they’re been baked though, so overall, I'd say use it if you enjoy the taste of it! 😊

Love this recipe. Always turns out delicious, unless I forget it too much in the oven, then I am not so happy.
I tend to switch the nuts as I don’t always have everything on hand, or replace the tahini with peanut/almond butter. I also like to add 3-4 tbs of cacao powder for a chocolatey taste. So it’s versatile, easy to make and it lasts me for 2-3 weeks. And healthy!!! 💚

The first granola recipe I’ve ever made. It’ll be the only recipe I ever try. Sooo tasty! I soaked my dates in some hot water which helped the blending process. I think this is a great recipe but did have a difficult time blending the dates and tahini. Is there a trick to deal with the constant sticking? I used more water than the recipe called for.
I was slightly disappointed that it wasn't very crunchy either...next time I will perhaps leave it for a few minutes longer. I enjoy the taste though, and think that the dates and tahini make a great alternative combination! 🙂

Hey Marion, a high-powered food processor and mixing for a bit longer can help the dates, tahini, and water turn creamier. If your food processor is less powerful, more water may be needed. Leaving the granola is a lovely idea for more crunch. You could also up the heat in the oven slightly if needed 😊

I have an oven which minimal temperature is 170°C (not 150): how long do you advise me to bake? I cannot turn it lower, it's preset at min 170°C-max 225°C.
Secondly, would other types of dates work out too (Deglet-nour from Tunisia or mazafati from Iran)?

Hey Mejasoa, aw thanks for the kind words. No worries, set it to 170 and then just keep a close eye on the granola, stir it a few more times in between and cook it for about 10 minutes less (you'll know it's done when it's golden and fragrant).

You can use other types of dates, but you may find adding a few more dates to the mixture helpful if it's not as sticky. We hope this helps for now and that you enjoy the granola if you're able to give it a try 😃

I mixed 2 types of dates: medjool and deglet nour and the medjool beautifully melted with tha tahini while the other left clumps and sticky and coarse bits. It all luckily kind of coated the other parts.
I also only had few rolled oats left so I mixed millet flakes together.
I cooked 25 min on 2 racks and the middle one turned crunchier, the bottom one chewy.
But one thing is CERTAIN: this is so YUMMY GOOD 😋!!! Thanks! This is my new favorite homemade granola recipe now 😃

Hey Harriet, to make sure it all gets combined well, I usually just get in there with my hands to give it a good mix. If the date/tahini mixture is too thick, you can always add a tiny splash of water to it before adding it to the oats to help coat it more easily. As for the crunch, it is crunchy in some parts, and definitely baking it longer can help make it even more crunchy, but it is softer than our other granola recipes. An great recipe, absolutely delicious! I usually use maple syrup for granolas but after trying this recipe, I love using the puréed dates now, it’s just sweet enough. As a personal preference, I double the cinnamon and salt, I like to feel the spice and the extra touch of salt helps all the ingredients sing. I also add the dried fruits after the granola’s cooled, no need to bake as they’re already dry. Thank you for this recipe!

Yesterday I tried the recipe for granola and was absolutely thrilled.

I don't really like the slightly bitter taste of tahini, but I still had a jar that needed to be used up. So I tried this recipe and I am extremely happy with the result. The dates, the cinnamon and the tahini paste make a sweet, but not too sweet, mixture that you could honestly just roll into balls and eat like that.

My tips: The date paste, mixed with the oat flakes and nuts turns it into a very sticky mass that you should tap rather than spread with short movements on the tray. And when baking, I turned the temperature down a little so that the granola could dry out well and become crunchy without turning too brown. I added the sultanas only 5 minutes before the end, otherwise they always get too dark for me. You can also halve the recipe if you are 1 or 2 people. It's still a big portion if you use it as a topping for something.

As a pure muesli, it is too sweet for me, so I mix it with coarse oat flakes - with fresh blueberries it is a dream. The recipe is quick enough that you can easily make the granola fresh when it runs out. All in all, it's the best granola I've had so far, because it has the most complex taste. : )

I love it! Delicious granola. I am just curious why you would bake the dried fruits. In other granola recipes you add them after baking. Is it better to add them before?

Hey Yonna, that's a lovely question and so glad the granola is being enjoyed! Adding the dried fruit beforehand in a recipe like this is okay considering it's being baked at a very low temperature. Because of the lower temp, the dried fruit tends to become chewy, which I find quite nice. For other granola recipes, the baking temp is higher and this can often dry out and burn the sugar in the fruit. But for this recipe, either way works 🙂

This granola is really easy to make and tastes wonderful with the combination of dates and tahini. It is also a good way to use up all the backing ingrediencies you might have left over, like walnuts or almonds. With this recipe you can nicely substitute with what you have at home. Depending on your oven settings you should check more often to get a golden but not overly crispy result.

Your website and videos are the best I've found. After years of being a vegetarian, I feel like I've learned so much about having a more nutritionally balanced diet from your videos and notes. I appreciate that the recipes are doable, meaning that they call for ingredients I'm likely to have in my pantry. I also like that I can have a stock of ingredients used for multiple recipes.

My question has to do with Medjool dates vs. Deglet dates. I usually buy deglets because they are less expensive. The recipes turn out satisfying and tasty, but I do wonder at the difference. Is there a preference for Medjool?

Our preference is whatever dates are most accessible, so feel free to use Deglet dates if desired. We personally prefer Medjool dates as they're generally a bit bigger and chewier than the more firm and smaller dates available to us. If substituting for Medjool dates, you may find it helpful to add a few more dates to the mixture if it's not as sticky ✨

This is an AMAZING recipe as it is so easy to make. And in my humble opinion, it takes much better than any store bought granola.
I love cinnamon so aded an extra 1/4 tsp. And I added about 1/2 tsp of pure vanilla extract to the date, tahini and water mixture, which creates a caramel taste (and smell). So good!! And so nice to know every single ingredient in the granola and know that there is no oil or refined sugar. Thank you!!!

Hi, wondering if I can use regular pitted dates? It’s kinda pricey to obtain Medjool dates in my country and the ones that are most accessible are US pitted dates and Pakistani (Khadrawy) dates. Which between the 2 would you recommend? Thank you!

Hey there, Rose! Feel free to use whichever dates are the most accessible to you. You may find it helpful to soak the dates to soften them up or add a few more to the mixture if it's not as sticky as desired. Pitted dates may be a tad easier than Khadrawy dates if those aren't pitted already 😊

Hey Samara! We haven't tested it out so we can't say with certainty, although we imagine it's possible with a bit of experimenting. We'd recommend using a small batch at a time on a non-stick pan. Medium heat and stirring often may work best. You could also add the nuts and seeds closer when the oats mixture is just about done to prevent over roasting them. We hope this helps for now and you enjoy the recipe if you're able to give it a try 😃

Hi there, Boglárka, thank you for the question! Our intention for the recipe was to use full dates with the pits removed, and then blend them into a sweet and sticky paste in step two within the recipe. Apologies for any confusion this may have caused.

We haven't experimented with date syrup in this one, although sometimes date syrup is sweeter and smoother than pureed dates. Perhaps starting with a 1/2 cup (125 mL) and adding more to taste is one approach. We hope this helps and you enjoy the granola if you're able to give it a try 😃

Thank you. I tried soaking dates but as you said, it didn't end in a smooth paste, even with the help of the liquid tahini and it was harder to mix it with the rest of the ingredients. I'll use organic date syrup but you are right it must be sweeter than dates. I love this granola, its the only one I make because of the fact that it has no added sugar or oil, plus because I love tahini. You are very inspirational eventhough I'm not a vegan.

Delicious! I used California dates, and they worked great. I was concerned that the 1/2 c serving size was very small, since I'm used to eating 1/2 c oatmeal cooked--at least double that 1/2 c serving size for breakfast. However, I tried a 1/2 c serving with plain yogurt and fresh berries, and to my surprise, after eating my 1/2 c serving, I was full. I'm now planning to make a double batch of the granola, now to be my new staple breakfast food.

Hi, Soniya, thanks for the lovely question! Feel free to omit the nuts and seeds, although tahini is made from sesame seeds so the granola would still contain seeds. If tahini is okay, you could omit the chopped nuts and seeds, and optionally replace them with more oats, dried fruit, or dark chocolate if desired 😊

If no nuts or seeds including tahini are desired, you could omit the tahini and add syrup to desired stickiness and sweetness. Alternatively, you could omit the nuts and seeds from our other granola recipes that use syrup as a base (rather than dates and tahini), such as a chocolate and fig granola: pickuplimes.com/recipe/chocol…. Hi sadia I’m incredibly happy that i found this recipe since we don’t usually use maple syrup or coconut oil in iraq but tahini and dates are essential in every house . I did combine both this recipe and the chocolate granola one i just added coco powder to the dates and tahini paste and FOR some reason it tasted like nutella to me and my little brother liked it . Hi there, David, we haven't personally tested out the recipe with extra thick oats so we can't say with absolute certainty. It's likely that the granola may benefit from a tad more nut or seed butter and a longer cooking time for crunchiness.

You can substitute the tahini for another nut or seed butter if desired, such as almond butter, peanut butter, or sunflower seed butter. We hope you enjoy the recipe if you give it a try 🙂

Hello Himabindu, thank you for the kind words and question! Steel-cuts oats are quite different from old-fashioned rolled oats. Steel-cut oats haven't been pre-cooked, and have much more fibre. We wouldn't advise using steel-cut oats in this recipe, perhaps it's one to try when you are able to get some rolled oats 😃

Although this granola requires slightly more time than your other recipes, I absolutely love the result. Maybe I’ve said it before, but I think this healthy option is a favourite. The date and tahini mixture does wonders: it really creates the characteristic crunchy lumps of caramelised ingredients as in store bought granolas. Importantly, it tastes so good!!! Love the nuts and I can’t wait to try this recipe with almond/macadamia and pecan/cashews. Figs instead of raisins works well😋
I’ve tried it with fruit and coconut yoghurt so far, but I’ll put it on PUL mango/peach smoothie for the weekend

That tahini and date mixture...OMG, I could eat just that and be a happy girl! Love this granola! I use to make my own but got lazy with kids, work, etc. The store bought stuff is full of refined sugar and stuff I don't want. This recipe is so easy and customizable. Adding more of the pureed dates, some syrup, or nut/seed butter to the mixture could help it get sticky enough to make bars before firmly pressing the mixture into a pan. We can't say with certainty what the proportions would be as we haven't tested it out.

I agree with the other—BEST GRANOLA ever! Using a seed, or tahini, instead of usual coconut oil and dates instead of usual honey or maple syrup make this higher in protein and minerals. I also use a tad bit less dry mix and make granola bars and take to the ice rink when I judge. Keeps my energy up and mind sharp for long competitions.. And it is a great recovery food after an intense morning of ice skating ⛸ for myself. This granola is on REPEAT and always available in my house.⛸💃🏼

Best granola recipe I've tried, honestly! The mixture of tahini and dates give it an amazing taste. I did it with walnuts instead of cashews and I took of the raisins and the coconut (so you can always adapt / simplify according to what you like or what you have at home). These taste amazing! I'll give them another try though as I hadn't seen that the recipe stated 'old-fashioned' rolled oats and I used normal ones instead. So as I mixed the date mixture in, the oats kind of disintegrated and almost turned into oat flour and I ended up with something closer to granola bars... It's still really nice but will try again!

Tried this recipe for the first time yesterday and really like it. I think I needed to bake mine longer (was at the max 30 minutes), as the granola still came out a little on the softer side instead of crisp. Either that or I need to separate it onto two baking sheets. In any case, I love the tahini/date combo in replacement of the usual oil/sweetener. I can definitely see the potential in this in using other nut or seed butters in place of the tahini for a change, too.

Since you're using a food processor for this, I recommend just chopping your nuts in the food processor before making the tahini/date mixture. Makes for quick work on the nuts and a few less dishes.

Didn't have raisins so used a combo of chopped dried apricots, dried cherries, and dried blueberries. Thanks for the tip on adding the dried fruit after baking so you don't end up with little fruit rocks!

Oh no! Sorry to hear about your food processor, Amanda. We can't with certainty for the juicer as we've never tested it out before, and I imagine it may vary depending on the model and power. We'd recommend soaking the dates and mashing them with a fork to create a paste-like mixture, although it will be a bit of extra work. Hope this helps 😃

I have been using this recipe every few weeks for over a year with a few tweaks!!! It is truly the healthiest, clumpiest, most delicious granola I've been able to achieve :) The only changes I make are: ·Using 200g dates (rather than 175g) ·Using 1/2 cup or so less dry ingredients ·Baking for about 15-20 minutes longer than the recipe states

Defenitely a time-consuming granola to make, but worth it all the way. I make this quite regularly as I easily eat two servings a day. In fact this is the only granola recipe I make, this is the crunchiest experience.

that's it! I'm never going back to store-bought granola. this is the best granola ever! I used a mix of peanut butter powder and peanut butter and I could not stop eating this and it had big clusters! Since then I use the date and peanut butter technique all of the time. I'm thinking of adding cacao powder and cranberries to make black forest granola. Basically, to end off, this granola never fails to impress, it's crispy, crunchy, and perfect.

I have eaten this granola every day for the last year. Not an exaggeration. I have given it as gifts on multiple occasions. I serve it to guests, and they always ask for the recipe. I cannot state how much I love this granola. I would name my first child after this granola.

It is softer than any other granola you would buy in the store, and the fact that it is sweetened by dates makes it healthy and delectable. When I eat it, I feel like I'm getting away with a crime.

I customize with whatever nuts or dried fruit I have. My current batch has cranberries, walnuts, and pecans. The standard batch lasts me two weeks, and I eat it on top of plant-yogurt or a smoothie every morning. (That's without doubling the recipe as it appears on this page.). I recommend adding a little more water to the date/tahini mixture so that it is easier manipulate.

I hope you try this recipe. If you enjoy it as much as I do, we can all name our children "PUL Healthiest Ever Granola".

Hey there, Anmol, that's a really interesting question! Adding more of the pureed dates, some syrup, or nut/seed butter to the mixture could help it get sticky enough to make bars. With that in mind, adding a bit more of the stickier ingredients to the recipe, firmly pressing the mixture into a pan, and baking it is how we'd approach making bars for this one. We can't say with certainty what the proportions would be as we haven't had a chance to test it out yet though.

Thank you so much for this recipe! I mistakenly overlooked the ingredients prior to purchasing them at the store and now I have roasted nuts & seeds.... How should I go about modifying the recipe to use the roasted nuts/seeds?

Based on the recipe, it seems that during the baking process the raw nuts/seeds get roasted while the liquid in the granola mixture evaporates, leaving behind beautiful granola clusters.

Hey Divya, lovely question! To prevent the pre-roasted nuts and seeds from burning, you could add them at the end or part way through to the granola mixture. Alternatively, you could add them at the beginning and stir the mixture often for crunchier granola 😃 We hope you love the recipe!

I started making this around April last year and believe it or not, I’m still making it now! Never ever bought tahini and dates in my life prior to trying this recipe. I also bought a food processor for this haha.

In my case, use dried cranberries as a substitute for raisins. If I’m feeling a little 😈, I add just a little bit of vanilla sugar before serving to make it more dessert-y! Still better than going for a sugary cake I think! :)

Have a question about how hard the texture should be at the end? Mine seems to be a little soft, perhaps I should have used two baking sheets and let it spread out better?

I left it in the oven for about double the time prescribed.

Hi PUL team, I have a silly question about the dates in this recipe. There is the little star comment saying "If dry, soak in warm water until softened, drain." Does it mean that I can use dried dates? (Maybe it's just my English that's lacking here, so if that's the case, I am sorry). Also, it is a rule that Medjool dates are always sold as a fresh fruit rather than dried fruit? I finally found Medjool dates on one website (Amazon would be very inconvenient for my location), but they are under the section of "dried fruit". There is a mention of them being "sun dried". I am really confused, please help me, I really want to make this recipe work. Love you, Anna.

Hey Anna! It's a great question, and apologies for causing any confusion. Indeed, the Medjool dates are a dried fruit to begin with. It's preferred that the dried Medjool dates used are a bit more "fresh", meaning that they are soft. If the Medjool dates aren't stored properly, they can become hard, because they 'dry out' even more. This is what we mean when we say "if dry, soak in warm water". I hope this makes sense and clarifies it a bit. For now, I've updated the wording on this blog post to make it more clear, and we'll be sure to use more clear wording with future recipes - thanks so much for letting us know 😊
