Hi
I wanted to know if it's raw Mango or ripe that you use here. If ripe can I use alfanso for a less sweeter kind?

Heyy Hemangi! We use ripe mango for this recipe so the chutney has a nice natural sweetness to balance the lime, chili, and onion.

You can definitely use Alphonso mango! It is naturally sweeter and more fragrant, so if you’d prefer a less sweet chutney, you could reduce the number of dates slightly or add a little extra lime juice to balance it out. Hope you enjoy it 🫶

I've had this in the PUL Curried Sweet Potato Burgers. I really love mango, but it looks like I'm not a big fan of it as a chutney. The flavor wasn’t awful, but I didn't love it, and I know I wouldn't make this one again.
