Shaved Carrot Salad with Tangy Sesame Lime Dressing
This shaved carrot salad is crunchy, fresh, and the kind of thing you can throw together in minutes that makes you feel like you’ve done something good for yourself. Eating a big pile of soft carrots isn’t always the most exciting, but shaving them like this and coating them in an addictive tangy sesame-lime dressing makes them so much more fun to eat. They’re also packed with beta-carotene (which the body converts into vitamin A to support things like eye health), and adding some avocado is a nice bonus, since the healthy fats can help your body absorb more of it.Servings

Salad base

½ cup (8g)fresh cilantro, chopped

½avocado, cubed

¼ cup (37g)unsalted roasted peanuts, chopped

1 Tbsp (9g)toasted sesame seeds
Dressing

½lime, juiced
-
1garlic clove, crushed

2 Tbsp (30ml)extra-virgin olive oil

1 Tbsp (15ml)rice vinegar

½ Tbsp (8ml)toasted sesame oil

1 tsp (2g)grated fresh ginger
Directions
- In a large jar or bowl, combine the dressing ingredients.
- Use a vegetable peeler to peel the carrots into long ribbons.
- Add the remaining salad ingredients to the jar, then layer the shaved carrots on top.
- Secure the lid and shake, then let sit 5 to 10 minutes so the carrots soften slightly.
- Enjoy from the jar, or empty into a bowl. Enjoy!
Notes
- †For us, 4 carrots weighed about 500g. We used a mix of multicoloured carrots (purple, orange, and yellow), though regular orange carrots work perfectly too.
Storage
- Store in an airtight container in the fridge for up to 3 days, ideally adding the avocado only when ready to serve.

Délicieux ! Je n'avais pas d'avocat alors je n'en ai juste pas mis. Super pratique pour une entrée ou un plat ou un accompagnement d'été. Je n'aurais qu'une seule remarque : il faut bien compter 25 minutes de préparation pour raser les 500g de carottes et non pas 15
