Sweet lime dressing

Fruit salad

  • 2
    kiwis, sliced
  • 1
    mango, peeled, cubed
  • 1 cup (150 g)
    fresh blueberries
  • 1 cup (150 g)
    red grapes
  • 1 cup (144 g)
    fresh strawberries, quartered
  • 1 cup (144 g)
    fresh blackberries
  • ¼ cup (3 g)
    fresh mint leaves, chopped

Directions

  1. In a large bowl, combine the agave syrup, lime zest, and juice.
  2. Add the fruit and mint to the bowl and toss with the dressing. Serve immediately. Enjoy!

Storage

  • Best to enjoy immediately.

Is there any way I can meal prep this to enjoy throughout the week? Will it last if I mix the dressing in morning of, and take it to work to eat later in the day?

Hey Sanne, to meal prep this fruit salad for the week, you can mix the fruit and mint ahead of time, but add the dressing right before eating to keep the fruit fresh. For example, you could consider making the dressing, packing it in a separate container, and mixing it in at lunchtime. This way, the fruit won't become more soft or soggy 😊

This is one of my favorite summer fruit salads. I've increased the volume of the recipe to take to potlucks, as well, and everybody loves it. The lime dressing is the perfect compliment to these fruits. I use maple syrup instead of agave and it works out great.

So tasty with so little effort! Fruit salads are such a fun way to get a day’s ration. And I like that you can vary this recipe depending on which fruits and berries are in season. I replaced kiwis with the same amount of peaches, as the former isn’t in season during summer. I really enjoyed the lime juice that softened the sweetness. However, I must remember to add the zest next time👌🏻
