Forgot to add, roasted pumpkin seeds really elevate this! I had only unprepared seeds available. In my first batch, I just toasted them (no oil) and that was pretty good. But for the second batch, I toasted them until they got really fragrant, then added just a teaspoon of coconut oil and a couple of sprinkles of salt - yum 😋 Recommend if you like a bit of a kick to the whole thing and to balance the sweet ingredients!

A great, easy breakfast and pre-workout snack! In my first batch, the fruit I added on top for decoration burnt a little 😄 so in the second batch I stirred them all into the batter and of course that tastes just as good!

I absolutely love those muffins, I have also reduced the sugar amount, added nuts. Such a great healthy snacks for when I am on the go teaching Pilates class.

Easy to make, the muffins are cooling now and the kitchen smells amazing! I used half of the sugar, this way it can be a healthy lunch for my son to take to school :)

It is like eating oatmeal in the form of a fluffy muffin! The muffin is subtle and slightly sweet - makes for a great snack or start to the morning.
