I made this
 8 portions and I could not get the potatoes to soften it turned out not great tbh, any advice we would love to try again..

Making 8 portions likely affected the cook time. In the app, the ingredient amounts scale proportionally, but the timers stay the same since cooking time doesn’t increase at the same rate. Increasing the portion size usually needs extra time to cook, though, so I suspect the potatoes needed longer to fully soften before blending. Chopping them up smaller and keeping the soup at a steady simmer helps too. Before blending, a fork should slide through easily! Yukon gold or other all-purpose potatoes also work best since they cook down faster. Waxy potatoes, for example, you'd want to avoid as they stay firmer longer.

Hey Annelies! You can leave the mustard out if you prefer. It mainly adds a bit of tang and depth to the soup. If you’d like to replace this slight tang, you could try adding a tiny splash more of the apple cider vinegar and adjusting the spices to taste đŸ«¶

The most amazing broccoli cheddar soup without the cheddar! When I first went vegan, I quickly realized that whole-food versions of “cheese” recipes, like mac and cheese and such, called for potatoes and carrots. I thought that was crazy to turn to a cheesy flavor, and honestly, I didn’t like any of those recipes when I first went vegan six years ago. Now, this may be new taste buds talking, but I seriously thought this tasted like real cheese. The PUL croutons are a must. I also enjoyed a sprinkle of “cheddar cheese.”

This was divine! I’ve tried other broccoli cheddar soup recipes before, but this was by far the creamiest. I was a bit nervous to add that much smoked paprika, but glad I stuck to the recipe. It balanced the texture and flavors perfectly. This will definitely be in my soup rotation!

Can I substitute the cashews with another nut?

Heyy Natasha! Thanks for the question. We haven't tried it, but blanched almonds (without the skinds) could maybe work. Almonds will give a slightly grainier texture though, and I'd recommend soaking overnight in water to help soften them a bit. I'd then recommend blending them a little longer to help remove some of that graininess. Be sure to give the soup a taste test as well, and adjust it as needed đŸ€—

For me, it was "half a victory": my partner absolutely loved it, while I was not the biggest fan ^^ I think the part that made our judgement differ is on the "heaviness", he loved it but I was not that much into it. Overall the taste was great, I just used romanesco cabbage instead of brocoli but otherwise kept the same recipe! I will probably do it again for my partner, he said it felt like a "cheat meal but in soup shape"!
