Creamed spinach, a timeless side dish, gets a plant-based makeover in our kitchen. We've swapped traditional ingredients for vegan cooking cream and vegan cream cheese, ensuring a lush, creamy texture. To capture that beloved cheesy essence, we've stirred in nutritional yeast. Elevating it further, we've topped the dish with crispy fried shallots. Perfect to serve alongside mashed potatoes, or simply enjoy it as a dip with some crackers.

Wow is this recipe not only AMAZING but it's also such a brilliant way to use up the frozen spinach that's just been sitting in my freezer! Such a yummy way to get more green in 💚

This looks amazing and want to try it! Question: in the US I’m having trouble finding soy cooking cream. The closest I can find is unsweetened almond/oat half-and-half. Is that thick enough for cooking? I think it’s meant to be a coffee creamer.

Hey HP! Thanks for the question. The unsweetened almond or oat half-and-half should work, but it might not be as thick as soy cooking cream. You could try reducing it slightly in the pan to help it thicken, or add a little more vegan cream cheese for extra richness and creaminess :)
