Delicious! I used 3 different mushrooms I got at a farmers market, one was lions mane.
This is an excellent recipe! I made it two nights in a row. First night I followed the recipe exactly. It was very good. We had leftovers. The next night I made it again using the leftovers as a base. I peeled off the puff pastry crust and tossed it. I chopped some more mushrooms, leeks, plus a shallot, chopped sun-dried tomatoes, along with their sauce and mixed in with the previous nights leftovers. When it was hot, I put it back in the baking tray, put the puff pastry on top and baked it for 35 minutes. Wow! The added shallots and the addition of the sun-dried tomatoes put the flavor to the next level. Give it a try! Thank you for a wonderful recipe.

Didn’t have enough flavor for us, we love the chicken chow rain recipe, any suggestions on which herbs/spices to add to this one next time for more of a flavor punch?

This was a treat! Such a delicious and filling meal. I was super lazy and quickly chopped the mushrooms in the food processor so my filling was less chunky. I steamed some cabbage to have on the side and now I'm happily full!
i have to preface this with: i am not a particularly fan of mushrooms. but this is delicious 🤤 i cooked the mushrooms longer than what is stated in the recipe. i really like the creaminess of the sauce with the crunch of the pasty.

This pie was delicious! I love how straightforward it was to make and I can see that other veggies and vegan protein sources could easily be subbed in to vary it in future. Next time I'll allow more of the liquid from the mushrooms to evaporate before adding the gravy because I think it could have been a tad creamier.

This was delicious and very flavorful. So comforting this time of year. It was fairly easy to make. I am not vegan so instead of butter beans (which I could not find anywhere) I used chicken. But I love that about these recipes is they are delicious either way.

I made 12 servings of this recipe at once. The sauce did not work with the amounts as specified for 12 servings, however I did the butter at 45g and 1/4 cup of flour and 1.5cups of milk. Added 1 tbps of mustard and 4tsp of vegeta (instead of bullion cubes). As I did not have pie crust I turned it into a 2 layer lasagna as I had lasagna sheets. It was amazing!!!!

When I made this the first time I wanted to use some puff pastry I had in the freezer but the dough smelled offputting. So I just served the sauce with some pasta and it was great. 😄
What I love about PUL recipes is that they are great for experimenting with. The leek-mushroom-bean-mix is great as is but with some small adjustments it can be even more delicious imho: Just deglace the pan with a splash or two of whitewine and add a small amount of soy sauce and maybe 1-2 tablespoons nutritional yeast to boost the umami and give it a slightly cheesy note. 👌🏻

We made this dish and enjoyed it with friends. Everyone agreed that the filling was excellent but that a vegan lattice pie crust might be a great option.
This is an incredibly tasty, comforting winter dish. I used spelt pastry which perhaps needed 5 mins less in the oven. My only criticism is that after washing the leaks and wiping and tailing the mushrooms my prep time was much longer than 10 mins.
