Most often associated with BBQs, cornbread is a popular side dish in the United States and has a complex origin, with roots in Native American, Incan, Mayan cuisine, and the Southern US black communities. There are many different recipe variations, from fried to steamed to baked options, which we took inspiration from. Although the date butter might seem odd, it's a perfectly sweet balance for the soft and spicy cornbread recipe.

This was a good recipe for savory corn muffins. We used less than the recipe stated of jalapeño peppers to decrease the spice level. We ate them with maple cream we had on hand.

Question: I was not as successful with the date butter. When mushing components dates did not readily breakdown remaining semi solid. Any suggestions?

Hi Kristen, thanks for your review! We're so glad to hear the muffins were enjoyed! The date butter can be a bit tricky. If the dates aren't plump and soft, you can try and soak them in warm or hot water for a few minutes, then try mashing. You can also use a small food processor or a mortar and pestle to really cream things together. Alternatively, you can swap the dates for some maple syrup.

Excellent muffin, and I love the flavour and the great way of adding vegetables into the diet! I have not tried the date butter, because there are some sweet ingredients in the muffins. However, spreading regular butter on a warm muffin really helps to dampen the jalapeño’s heat

I blended the jalapeños with the blended corn to distribute throughout. These were great even without the date butter recipe. Hubby was pleased as well! Thank you.

Date butter is such a good idea. Hitting sweet, salty, and spicy all in one bite is so pleasing, I will for sure be making this for my friends! So incredibly good 😭

Excellent texture! If eating the next day, microwave for about 15 seconds. I would double the amount of pickled jalapeños next time as I couldn’t seem to find any when I ate them.
