1roasted red bell pepper from a jar, chopped

½ cup (88 g)marinated artichoke hearts, chopped

1½ cups (30 g)arugula

Directions
- Add the oil to a large pot on medium-high heat. When hot, add the garlic, onion, bouillon, and chili flakes. Cook for 2 - 3 minutes.
- Then add the uncooked pasta, passata sauce, water, hummus, and nutritional yeast to the pot.
- Reduce heat to medium, partially cover with a lid, and cook for 10 minutes. Check on the pasta a few times and stir to prevent sticking to the bottom of the pot.
- Add the zucchini, cooking cream, bell pepper, and artichokes. Cook until the pasta is al dente, about another 5 minutes.
- Stir in the arugula when ready to serve. Garnish as desired, and enjoy!

- †Passata is a smooth, thick tomato sauce made from strained tomatoes without added seasonings, herbs, or spices.

It doesn’t matter if I’m meal prepping or cooking for a large group, I always come back to this recipe. It’s so delicious and easy to make. Don’t skip the hummus, it’s a must since it makes the sauce creamy and provides protein. Love it!

Very delicious pasta. I was very hesitant to add hummus but that’s what makes this really creamy even without the cream. I also added extra water and the pasta took longer to cook than I thought probably because I was letting the heat out stirring it so often. Very delicious, no frills recipe. You could technically cut out or substitute the vegetables and I’m sure it would yield the same effect. Onions, garlic, hummus and tomato sauce are the main players.

Always make this recipe when I'm in a hurry and out of inspiration but have to cook for a large group of people; everyone always loves it ! I cook the pasta separately as I prefer pasta that way, but also because I can then make more of both pasta and sauce :) I love how its so easily adjustable; I've added in a bunch of things as well as left out some things, the creamy rose sauce never fails to make everything taste amazingly.

This was delicious
Easy to make and tasty. It was all in one pot so it was convenient. I used wholemeal pasta and cooked for a little over 10 mins. It came out creamy and delicious.
I wasn’t sure about the proportion of some ingredients. I adjusted down the tomato sauce and added a little more water. I deglazed the onion and garlic stage with red wine. Skipped the cream entirely cause it seemed creamy enough. I added some cannellini beans to boost protein. Added in more arugula than the recipe called for which worked well. Artichoke could easily be substituted with something else as suggested by others. Will make this again but will continue to adjust ingredients.

I was skeptical at first about adding hummus to this dish but I am so very glad that I tried out this recipe. I made it with a lesser amount of chili flakes as we don’t like that much spice. This recipe was absolutely phenomenal! Easy to make in one pot, it was so creamy, delicious, and flavorful. I am definitely going to be making this again soon.

This was such a comforting meal on a rainy day! Love that we were able to make everything in just one pot and that you always offer substitutions. Instead of arugula we added spinach and also a can of cooked chickpeas (rinsed, of course) and it was just perfect! Thank you!
very good, but if you leave the garlic out, you will need some spices like rosemary or so.
And its important to cook it partially covered, not full covered, like i do. (because I wanted to avoid steam and always do it that way to save energy😅). Otherwise you're more likely to have soup😇

I'm not a big fan of this whole One-pot-thing. My Noodles get too hard or too soft and are never the way I want them to be. But the sauce ist delicious and I will cook it separately next time 👍🏻

1000% my favourite recipe here! I have made this SO many times since serving it to my parents for our first try ;) I finally had to come on to rate it because I just made it sans recipe (since I thought that I *had* to have remembered all the ingredients) and just wanted to say that you don't actually need the cream for a velvety smooth sauce (ask me how I know lol) - you just need to add some more water. It doesn't stick as well to the final dish as it's a bit runnier than before but still delicious.

Quick, easy, delicious and nutritious 🫶🏼 It became a classic in our home, which we easily adapt to our fridge leftovers.
For those interested: works well for meal prep and in a pressure cooker* (instant pot). Just omit the veggies at first since they don't need to cook that long and stir them in after the pasta is cooked. I didn't use zucchini this time though because it's not in season. You might need to either cook it separately or adjust the cooking time of the pasta, like a minute less, put in the zucchini and cook with an open lid
*I put mine on manual, high pressure and cooking time around half of what the pasta package says (so for 8min pasta 4 min) and then quick release.
Easy directions. It did take longer to cook but that’s minor. I added some herbs and lemon for more flavour but another tasty recipe. Thank you.
Ever since I first tried this recipe it has become a favorite! Especially when I have guests over I like to impress them with this dish 😉. I am thinking of making this dish (as one of a few) for a dinner I will be hosting for 20 people. Do you have any recommendations for scaling this recipe up a lot? Could I then make the sauce in one pot and cook the pasta in another? Should I then use less water in the sauce, and maybe home made hummus to reduce costs? Would love to hear your ideas 😊
This dish has become a staple for me and I made it this evening for a ‘Galentines dinner’ and it was a hit! It’s super easy and very delicious - - it’s very velvety with little bursts of subtle spiciness

This is one of my favourite ways to have pasta (and I don't even normally like humus!). Made it so many times with different veggie combos and with and without adding the extra cream/alternative and it's still yummy. I find it way too liquidy though if I follow the recipe to the letter so I just add water in small amounts as needed rather than in one go as well as reducing the tomato to one jars worth. Plus I always reduce the chilli and garlic on all PUL recipies as I do not have the same stamina for them as your team obviously does haha! But that's a personal preference thing :)
So yummy! I subbed basil for the arugula and used cashew cream in place of the soy, which worked quite well :)
Super creamy, luscious, and delicious! I love pink sauce and love that hummus is the main driver of creaminess for this one. I actually made it with long-strand pasta that I cooked in water separately and then added to the pan with the sauce once slightly pre-al dente (so two-pot pasta 🤷♀️🥴!) I ended up omitting the artichokes and dialed down the heat (just for preference). I also added more hummus for extra creaminess and used a full-fat oat milk instead of coconut. Thinking of using roasted red pepper hummus next time, as well🤔. But definitely making it again ….such a comforting and delightful sauce! Thanks, as always, PUL💕

This dish was so delicious! I used gochugaru instead of chili flakes and added some Italian herbs as well and it tasted incredible. Especially using the homemade hummus recipe! Will definitely make this again.

This was really good! Such a nice mix of tomato and cream flavour. If you like your zucchini more cooked, I would recommend just adding the half-moons at the start (or a couple minutes in), since for me they were still quite a bit too crunchy with only 5 minutes of cooking time.

Hi! Love this recipe. I haven't made it in a couple years admittedly, but the last couple times I made it I had a problem with the pasta sticking to the bottom of the pan. I'm not sure what I was doing wrong, I tried to stir the pasta consistently, add more oil, but nothing worked. Do you have any suggestions, or would it be easier for me to just cook the pasta separate from the sauce?

This recipe ist absolutely incredible and one of our long-time favorites! We use 1 zucchini and 1 fresh bell pepper for 2 people and we roast and season the veggies in a separate pan before adding them to the pot. It takes a little longer but it tastes amazing!
This was simply delicious! I made roasted pepper hummus too and then made the dish. I used broccoli and spinach along with zuchini and bell peppers. Other than the pasta wanting to stick to the pot I didn’t have any issues. This is going to be a regular at my house! Thanks for posting this dish!

Just cooked this recipe and the sauce really is delicious! Very rich and comforting and it comes together so quickly, too! I don't like zucchini or artichokes so I substituted for mushrooms and brussel sprouts which was a fun twist. So looking forward to having the leftovers tomorrow!

I used the Banza chickpea pasta and found that there was still a lot of liquid left at the end, which I’m guessing is because the penne doesn’t absorb much liquid. Still delicious!!

This meal gets made very frequently. I love it, and the fact that it's a one-pot meal makes it even better. I made this one night for my father who is an avid meat eater, he really liked it and said it was very filling!
This is a staple recipe in my kitchen. My non-vegan partner absolutely loves eating this and I love making it because it is so easy because of the one-pot aspect. Flavors are on point and can be custom to what you want more or less of. I think the directions/order could be changed. I have tweaked it to fit my preferences. I like the vegetables cooked more and the way this recipe is written, the veggies come out harder/undercooked. I find that they need way longer to steam in the sauce, so instead, I just cook the veggies in the pot first and then add my sauce and hummus, and pasta.
I also cooked this dish tonight. For hummus, I used the rest I had from a wild garlic one I made in April, as wild garlic was abundant.
One question about the quantities, esp pasta: what's the reason of not using the whole package of pasta (I think it comes everywhere in 500 gr packages)? I mean, what do you do with the rest 215 gr of penne left over in the package?... I find it more practical when the recipes ask for the entire or half of the packaged ingredients, don't you?
