Ingredients

Meaty mushrooms

  • 1 Tbsp (15 mL)
    vegetable oil
  • 3.5 oz (100 g)
    oyster mushrooms, cut into ½ cm coins

Pasta

  • 11 oz (320 g)
    dry spaghetti noodles

Pasta sauce

  • 1 Tbsp (15 mL)
    vegetable oil
  • 1
    medium onion, finely diced
  • 3
    garlic cloves, minced
  • 1
    zucchini, finely diced
  • ½
    red hot chili pepper, seeds removed, finely diced (optional)
  • 5.6 oz (160 g)
    mock "chicken" pieces
  • ½ Tbsp (4 g)
  • ¼ tsp
    salt, plus more to taste
  • 2 cups (60 g)
    fresh spinach, chopped
  • 1 cup (240 mL)
    soy cooking cream
  • 1½ tsp (7 mL)
    dijon mustard

Toppings

  • ¼ cup (6 g)
    fresh basil, thinly sliced
  • ½
    lemon, juiced, to taste

Make your own

Directions

  1. Add oil to a large pan. When hot, add the mushrooms in a single layer and cook until golden on both sides.
  2. Meanwhile, cook the pasta in a large pot of salted, boiling water until al dente.
  3. Add some oil to a sauté pan on medium-high heat. Add the onion and garlic. Cook until lightly golden.
  4. Then add the zucchini and chili and cook for 4 minutes.
  5. Add the mock chicken pieces, spice mix, and salt. Cook for another 4 minutes, or until golden.
  6. Then add the cooked mushrooms to the pan, along with the remaining pasta sauce ingredients.
  7. Cook until heated through. Adjust seasoning to taste.
  8. Plate the sauce and spaghetti separately or mix the spaghetti in the sauce. Garnish with fresh basil and some lemon juice squeezed overtop. Enjoy!

Storage

  • Best to enjoy freshly made.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Add a splash of water when reheating to loosen up the sauce.

We loved this recipe! The flavours and the creaminess made it a great dish. We keep noticing though that your servings are smaller than what we would eat with the two of us (and we are not big people 😅).

I added this to my grocery list and bought oyster mushrooms but when I started cooking I realised that the pictures seem to be King Trumpet mushrooms. I tore the oyster mushrooms up and followed the recipe. It was good but I added pasta water to make up for a few mils of soy cream that we were lacking. The overall taste did then feel a bit watered down and I think the subtle flavour of our mushrooms was overpowered. We added pepper at the table though and it was still enjoyed by everyone. I'll definitely be trying this again.

Thanks for sharing your experience, Phillipa! Using pasta water is a great way to adjust consistency, and it’s good to hear it was still enjoyed. The mushrooms are called King Oyster mushrooms at our local grocery store, although King Trumpet mushrooms should work too ☺️

This was absolutely wonderful! We used soy curls for our protein. Bunch of different, interesting flavours. Very filling and simple to make.
