I bought a bag of millet and challenged myself to use it for more than just porridge. This bright, herb flecked pilaf was one of the recipes that came out of it, and I’ll definitely be making it again. It’s light yet full of flavour, with caramelized onion for sweetness, lemon for zest, and plenty of warm spices and fresh herbs for a Middle Eastern inspired feel. Turmeric gives everything a beautiful golden colour, and the toasted almonds on top are non negotiable. They add the most satisfying crunch. Perfect as a vibrant side, or as a base for bowls and salads.
