Although distinctly different dishes, there are many similarities between a ratatouille and a Provençal tian. They differ in their preparation and cooking methods, but both utilize a rainbow of beautiful summer produce and cook them down into a divine vegetable stew. Our fusion recipe was inspired by the confit byaldi creation from French chef Michel Guérard. A herb-loaded pistou-esque sauce adds an extra boost of bright flavour. This juicy dish begs to be eaten with a crusty loaf of bread to soak up all the deliciousness!

I can't easily buy fresh oregano or fresh thyme where I live, so I used dried options for these two herbs. The dish came out very pretty, but more importantly, it tasted great. Amazing option for summer dinners/lunches.

I had saved this recipe and had been wanting to make it for quite a while, but it seemed like a lot of work. I asked a friend if she wanted to come over and make it with me. We had a lovely time cutting and cooking but we both expected a bit more of the outcome. It’s not bad per se, but maybe not worth the time and effort. Also we doubled the amount of ingrediënts for the green herb sauce. All of the PUL have been absolute showstoppers so far, this one is the first one that I will not be making again. Thanks nonetheless for your inspiring recipes. If anything, it looked gorgeous!

The flavors are super strong so serve with a baguette, honestly I don’t think it’s worth the effort but if you’re in a mood for French cuisine then you won’t be disappointed
