This salad harmonizes heartiness and freshness flawlessly. It combines tender halved baby potatoes, crisp green beans, and sweet peas with the sharp bite of thinly sliced radishes and the soft, buttery texture of lamb’s lettuce. The dressing adds a unique twist, featuring chopped pickled pearl onions and a splash of their brining juice for a tangy kick.

I made this for dinner tonight and it was delicious! We ran out of Dijon mustard so we supplemented the rest with ground mustard seed and it was still pretty delicious. Also didn’t have pickled onions so we used pickles instead. This feels more like a Russian style meal and it is VERY filling in the best way.

Thanks a bunch for sharing your experience with the potato and pea salad, Haley! So glad it was enjoyed with the modifications 🤗

I made this for dinner with some drop biscuits, and it was really tasty! I did make a few modifications: I don’t like onions, so I used pickles instead, and I added a few grilled green olives and the oil they come in, which gave it a slight smoky taste that was so tasty! Next time I would 1.5 the dressing recipe, so it better covers the lettuce.

Super easy, super healthy, super delicious! Plus it doesn't require a lot of ingredients, so it also cheap to make!
