Whenever I want a meal that's fresh and light, I make summer rolls. You get a ton of crunchy veg, satisfying protein from lemongrass tofu, and a little extra heft from the rice paper wrapper and vermicelli inside. They’re colourful, wholesome, and feel-good. The best part is the dip. These are served with a vegan version of nước chấm, the classic Vietnamese sweet-tangy, garlicky sauce that’s usually made with fish sauce.
