The true star of this vegan cauliflower soup is the incredible cauliflower-miso topping! This addition not only brings a satisfying texture but also adds an abundance of umami goodness to the blender soup recipe, so you definitely don’t want to skip it. It’s a rich and savoury roasted cauliflower soup perfect for chilly days and makes for a hearty, anti-inflammatory meal.

This one’s a real winner! The miso and spices round out the vegetal flavor from all the veggies. My husband and I ate this for 3 days and weren’t tired of it, it reheats really well too.

Delicious. Did everything according to directions. I don't have immersion blender, so I used potato masher and I actually really liked the texture of it 😋

Lovely way to eat cauliflower. Not bland at all! Pleasant creamy texture without potatoes or starchy ingredients. The topping adds a nice touch and makes it more interesting (I left out the breadcrumbs and did not miss them). I doubt the leftovers will stay in the fridge for 3 days...

Delicious and filling! Didn’t do the topping because didn’t have ingredients. Topped with lemon juice and chili oil to give brightness and zing!

I love smooth vegetable soups, and this one is so flavourful and filling. Great way of using miso paste

This is my new favourite soup. The flavour is SO SO GOOD! I used all the cauliflower including the leaves, subbed one of the stock cubes for a mushroom one, and used the air frier and less oil for the topping. I will 100% be making this again 😋

What a delicious hearty soup, good for all the seasons. And wow, the Furikake seasoning is a great discovery, I would really try to use it instead of only the sesame seeds.
