I had never seen this type of toast before, but I gave it a shot, and it's so yummy! It also effortlessly looks as gorgeous as the pictures. I used capers instead of olives as well, which adds just enough saltiness if you aren't big on green olives.
Probably my most tried and approved recipe of the whole PUL. The combination of the anis flavor of the fennel, combined with the acidity and sharpness of the orange works perfectly with the salty olives (went for black ones). As a salad or on bread with the whipped tofu, this is a banger and perfect for meal prep

I'm a bit obsessed with this toast right now. For those who don't like olives I recommend trying it with capers. Also I always make a huge batch of the topping and eat it as a salad.

Absolutely delicious! The whipped tofu is quite mild, but with a distinct umami, salty flavour similar to feta cheese😯
Pairs so well with the sweet fennel mix.
Skipped the agave syrup in both components, because I think that the orange juice is sufficiently sweet for my taste.
