These savoury, umami-rich chickpea muffins make an ideal breakfast or midday snack to boost your energy. Packed with vegetables and a good source of protein, they are easily customizable with your favourite veggies. Just be sure to avoid overly watery vegetables, which can make the muffins soggy.

Could I meal prep these and freeze them? They look delicious but I'm afraid I won't eat them fast enough.
Jelena - April 14, 2025, 8:25 p.m.
Wow! They were even more delicious than I was expecting! So satisfying! I made the mixture for 12 muffins, got 13 and I used different flour. These are a perfect breakfast / dinner option, as well as for traveling ❤️

Aww love a bonus muffin moment! So glad they turned out satisfying with your flour swap and worked well for on-the-go meals too, Jelena 🥰

Another day, another batch ☺️ I am officially hooked! This time I used two red paprikas and two pickles and they tasted amazing. Thanx PUL team ❤️

Very easy to make.

What could I bake these in if I don't have a muffin tin? I am looking for a make ahead savory breakfast and this looks like it fits the bill
PUL Team - April 9, 2025, 3:49 p.m.
Hey Sarah! If you don’t have a muffin tin, you could bake the mixture in a greased baking dish or a pie dish and cut it into squares after baking. Perhaps a 9x9-inch (23x23 cm) square dish would work well. If you're using a larger or smaller dish, just be sure adjust the baking time slightly. It may need more or less time depending on the thickness of the batter. Keep an eye on it, and check for doneness with a toothpick ☺️

So easy to make and so excellent! I used veggies I had on hand: red pepper, Serrano peppers, diced sundried tomatoes, and artichoke hearts. Definitely will make again.

Woop woop! So thrilled to hear that the muffins were enjoyed, Ara ☺️
Phillipa - April 3, 2025, 9:07 p.m.
Can you also use frozen sweetcorn?
PUL Team - April 3, 2025, 9:52 p.m.
Hey Phillipa, we haven't tried, although we imagine frozen sweetcorn can work. If you test it out, perhaps just rinse it under warm water and pat dry to remove any excess ice before adding 😊
Tanja Gjorgjievska - April 9, 2025, 10:03 p.m.
I prepared them using frozen sweetcorn, following the PUL Team's suggestion, and they turned out great😀

Looks so good! I will definitely try these. I wonder if the taste is the same as IKEA's frozen vegetable balls because the ingredient list looks very similar
PUL Team - April 2, 2025, 3:07 p.m.
Hey Julija! We haven't personally tried the IKEA ones before, so I want to say they won't taste the same, although we'd love to hear your thoughts if you make the recipe 💛
