This tomato tartare is an umami bomb. The slow dehydration of the tomatoes in the oven not only intensifies their flavour, but adds a delicate meaty bite to them. Is 1h and 200 Celsius correct?
Seems very long and hot to dehydrate the tomatoes.

Hey there Roelof! Good question, and yes, 1 hour at 200°C is correct for this recipe. We tested it with top and bottom heat (not fan-assisted), which is important since fan ovens can dry and brown much faster. It does sound hot if you’re thinking of classic low-and-slow dehydrating, but here we’re just trying to drive off excess moisture fairly quickly so the tomatoes get firmer and more concentrated for a tartare-like texture. If your oven runs hot or you’re using convection, you can start checking around 40 to 45 minutes or lower the temperature slightly, and pull them once they look a bit shrivelled but still pliable, not browned or crisp. This was really great! Very much worth a bit of extra labor - it was a big hit at my dinner party. The texture and flavor of the tomatoes turned out perfect. People asked me “what the red stuff was” because they couldn’t tell!

Hello i wonder if I can use only the Worcestershire sauce and can I use a cucumber instead of pickles cause everytime I buy a cucumber there is always a piece that I don’t know what to do with ? Thank you. I can’t wait to try this.

Hey Jess, you use only Worcestershire sauce if you prefer, bu it'll change the balance of flavours slightly. Maybe start with less and add more to taste. As for the cucumber, it will have a milder flavour, while still adding a crunch-factor, but we imagine it'll still work well 🤗
